Healthy ABC Soup


Invited some friends over for dinner today. Decided to make ABC soup despite I am not really a soup person but one of my friends is. She is a cantonese. And this is one of the easier soup to make. No fuss and healthy. Instead of using slow-cooker, I decided to try out my seldom-used thermo-pot.
Ingredients


1 large carrot, cut to chunks
5 medium potatoes, cut to chunks (used indonesia potatoes which is better for soup & stew)
1 large yellow onion, cut to chunks 


500g of pork ribs, blanch in boiling water till cooked, then rinse in cold water


Dried baby scallops, soaked
1 litre of water




Directions

Boil the water and put in all the ingredient
Boil on high for 20 min.
If you are using a thermo-pot like me, you can place the soup pot in the therma-pot and let it continue to cook for 2 hours.

If not, you can turn it to low-med fire, and let it simmer for 1 hour. Serve it with rice.

Been wanting to get a therma-pot, my HK friend here use to cook porridge and soup using this pot and bring over to our lunch sharing function. she said save electricity and no fuss to keep an eye on the cooking.

Hi Yin,

Therma-pot is quite useful. In fact I forgot to mention the effect of the thermo-pot is as good as a slow-cooker. Do consider:)
