Almost "Famous Amos" Cookies


1 year ago, I joined the girl brigade as a volunteer to lead them through various activities. They are very shy and not as open as I hope they will be. Often, it took me more than needed, to get them to respond to me in one sentence. I felt pretty helpless and was cracking my head about how to get them to be more responsive towards me.  Finally, one day, this idea came to me ---> why not try baking something to bring to meeting?!  Decided to bake chocolate chip cookies. Who will deny themselves this indulgent, especially teens. 



Indeed, my plan hitted  jackpot. Brought the cookies to the meeting and all of them went crazy.  They loved them and said the cookies are like those bought from Famous Amos. I am elated to hear all these compliments. More  important than praise is that ever since that day, I do not need to go to them. Instead they will come after me and the first thing that they will ask is, " when are we going to eat chocolate cookies again?"

Almost Famous Amos Chocolate Chip Cookies

125g of self raising flour
75g of butter (leave in room temperature for it to soften)
150g of semi sweet chocoalte chips
80g of brown sugar
50g of caster sugar
1/2 tsp of vanilla essence
1/2 tsp of bicarbonate soda
1/2 of salt

  • Preheat the oven to170°C
  • Mix the brown sugar and caster sugar together in the mixer bowl
  • Put in the butter and whisk with the mixer. Mix thoroughly.
  • Add in the egg and vanilla essence and mix
  • Then add in the flour, bicarbonate soda and salt and mix on low speed till the flour is incorporated
  • Add in the chocolate chip and mix with a spatula thoroughly
  • Cover with the cling wrap and refrigerate for 1 hour
After 1 hour, take out the dough and roll it into the ball. To ensure that all the cookies are (nearly) the same size, you can use a small  cookie scoop to scoop the dough onto a tray covered with baking sheet. Ensure that the dough on the tray are well spaced as they will become bigger as they bake. Transfer to oven and bake no longer than 13 min. If  you like your cookies to be more burnt, you can extend another 2 min more in oven.

Once baked, do not attempt to remove the cookies from the sheet straightaway. The cookies are very soft at this point. Let them cool down first. They will become harder and is easier to pick up from the tray.

Back at hometown, Amos cookies considered those branded cookies not cheap to eat.
